Mash potatoes plain with butter or add ingredients like cooked turkey bacon, low fat cheese, parsley, green onion, garlic … you get the idea. Spoon into a greased muffin tin, then with a fork press the top and brush with melted Smart Balance butter.
Bake at 375 degrees or until tops are crispy and golden.
