Banana Pecan Bread


2 c. whole wheat flour
1 t. baking soda
1/4 t. salt
1/2 c. unsweetened applesauce
3/4 c. honey
2 eggs, beaten
3 mashed overripe bananas
1 c. pecans
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan. In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together applesauce and honey. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; add pecans; then stir just to moisten. Pour batter into prepared loaf pan. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Cream Cheese Frosting
Frosting (optional, but delicious)
1 – 3 ounce package Cream Cheese, softened
1/2 C. SmartBalance Butter Sticks or Spread, softened
1 tsp. vanilla
2 C. Powdered Sugar
1. Cream together cream cheese and butter, stir in vanilla.
2. Add powdered sugar a little at a time, beating well, until mixture is smooth.
3. Warm in microwave just until liquid enough to pour.
4. Drizzle over cake
